How to Create a Chocolate Praline

At Butlers, we like to think we’re bringing a little happiness to the world, one chocolate at a time. Let’s follow the story of a Butlers Gianduja - which is a type of praline.

Step One

Pralines are a confection of hazelnuts, chocolate and sugar, made using milk, white and dark chocolate.

Step Two

Firstly, the ingredients are mixed together. It is important that the chocolate is tempered to maintain a liquid consistency.

Step Three

Once the mixture is made, it is transferred by ladle into a tray.

Step Four

When the mixture has cooled it is removed from the tray in one piece.

Step Five

Next tempered white chocolate is poured onto the Gianduja and spread over the surface.

Step Six

Once this has cooled, this is repeated on the second side to create a sandwich of white chocolate and praline.

Step Seven

When the white chocolate has cooled, the entire piece is cut into strips. These strips are then lifted, turned and cut again to create individual rectangular shaped chocolates.

Step Eight

The untidy pieces at the side are removed.

Step Nine

A perfectly cut Gianduja!

Step Ten

Finally, the Gianduja is packed by hand into a special Butlers assortment. Each box is checked by the quality team for both weight and perfection.

Step Eleven

Then a protective cushion and selection card are added.

Step Twelve

Each box is finished with a ribbon and bow. And now our story is complete – a little moment of happiness, just waiting to be enjoyed.

Where does Chocolate Come From?

Chocolate comes from the cocoa bean, which comes from the fruit of the cocoa tree. As the Spanish discovered, this tree is very difficult to grow. In fact, it will not bear fruit except within the band of 20 degrees north and 20 degrees south of the equator and only at an altitude which does not fall below 16 degrees Celsius and has constant moisture.

Modern day cocoa trees are approximately 3 metres tall, which allows for easy hand harvesting. They are evergreen and come to maturity within three or four years and at which stage flowers and fruits begin to appear. The fruit of the tree is a cocoa pod, which grows directly from the trunk and the thicker branches. The small number of flowers which mature into pods take six months to grow. Cocoa pods are very hard and are cut from the tree by knife. Inside the cocoa pod, there are 30 or 40 cocoa beans, cushioned in a soft, white pulp. The pulp-covered beans are scooped out and covered with large leaves on the ground, where they are left to ferment for several days, having been mixed every couple of days. This fermentation stage is critical to the development of the aroma and flavour of the bean.

After fermentation, the beans are dried in the sun. Once dry, they are cleaned and the shell is removed to produce cocoa nibs. These cocoa nibs are roasted to develop their flavour even more. The beans are then crushed to produce cocoa mass (sometimes called cocoa liquor) and cocoa butter.

The different types of chocolate

Cocoa mass gives chocolate flavour and colour, thus there is more cocoa mass in dark chocolate and none in white chocolate. Cocoa butter creates texture and reduces bitterness.

The proportion of cocoa solids in chocolate is a combination of both cocoa mass and cocoa butter and it is their proportion which contributes to both flavour and texture.

Dark chocolate by definition has no milk, is sweetened with sugar and has a higher level of cocoa solids, pre-dominantly cocoa mass. This contributes to its dark colour and bittersweet flavour. Butlers dark chocolate has a balance of cocoa mass and cocoa butter to create intensity without being overly bitter.  Butlers dark chocolate (also known as plain chocolate) contains a minimum of 58% cocoa solids.

White chocolate, on the other hand, has milk and sugar with a lower cocoa content, derived from cocoa butter only. The fact that it has no cocoa mass means that it is white in colour and it is creamier and sweeter. Butlers white chocolate contains a minimum of 26% cocoa solids.

The addition of milk gives milk chocolate a balance between sweetness and intensity. Butlers milk chocolate contains a minimum of 32% cocoa solids and 20% milk solids.

Tempering Chocolate

Cocoa butter has a very complex structure which can cause chocolate to be dull or grey in appearance if improperly handled. Therefore, when working with chocolate it must be at the right temperature to achieve the right structure. This is a process called tempering.

Firstly, the beginning the chocolate is heated to above 40 degrees Celsius to melt it fully and then the temperature is lowered gently to about 30 degrees by adding more chocolate to it. This gives the chocolate the correct structure and requires the knowledge of the Butlers chocolatier to recognise when the chocolate is tempered.

It means I'm all the happier to go out of my way to walk past 10 other coffee shops to get to one of yours - and then my taste buds are well rewarded also. Keep up the good work all around!"

Anytime I am in Ireland, while other visitors are going to Blarney Castle, I am on my way to the nearest Butler's Chocolate Cafe or chocolate shop. I view your chocolates as the gold standard, leaving all other chocolate companies in the dust. I have yet to come across any other chocolate--made anywhere--as rich, creamy, smooth, and totally satisfying as yours. Your company has done a great job in creating indulgent products that everyone can appreciate. I am eagerly await my next visit to Ireland when I can once again savour your chocolates."

“I am just writing to you, to highly compliment you on the standard of chocolates and to let you know, how much I love them. I work in Limerick and I have quite a stressful job, I am just finished a week of nights. One night in particular, things were extremely busy and I needed a little time out. To make a long story short, I grabbed a cup of tea and my friend, opened a box of Butlers in the canteen that we had since Christmas. I have no problem saying, your chocolates completely cheered me up and helped me relax. I was sitting at home after and said, with all the bad press about recession and everything. It’s great to see, Ireland still has some top quality products. So thank you sincerely for making delicious chocolates.”

- Patrick Hanlon

- Adrian Colburn

“We received two big parcels of Butlers Chocolate some hours ago. They both are carefully packaged and they arrived here in perfect condition. Thank you very much for doing such careful packaging. My wife and I opened one of the boxes immediately, brewed coffee and ate some chocolates. Yes, we love your chocolates! They are not too sweet or too dark or too soft. Also they are not too large or too small. I have some friends in Europe and sometime they give us their favourite chocolates (from Germany, Belgium, France and so on), but I must say that Butlers Chocolate is my most favourite one. Your product is so natural and has a depth, and I think that Butlers Chocolate is to Japanese people's taste. This time I ordered 7 boxes in total from you, because I wanted to give them to our parents and friends as a small gift. I believe that they will be delighted with natural taste of your products as I do. Thank you once more for your help with my ordering your products this time. I hope that this message finds you well today! All the best.”

- Daisuke Suzuki

“I just wanted to say how much I love your chocolates. Every time I go to Dublin, I make a point of visiting a Butlers - I usually go to the one on Grafton Street. I love your hot chocolates - they are the best hot chocolates I have ever tasted (and trust me, I have had a lot of hot chocolates!!). I also love the white chocolate and raspberry chocolate too - I was just over in Dublin this weekend and have already got through two big bars of it! I also wanted to enquire whether you are considering/would consider in the future opening a shop in Manchester. I see you have a shop in London, but I don't often get chance to go to London (in fact I think I go to Dublin more often than London). I would love to be able to buy Butlers Chocolates whenever I want, and treat myself to a gorgeous hot chocolate when I'm having a bad day! I'd like to finish by thanking you for making such great chocolate! I had a bar of the white chocolate and raspberry chocolate after work today, I had a really stressful day, and the chocolate was so gorgeous it made me feel so much more relaxed!”

Sitting in front of me is the rest of the bar, a box of you mint truffles and a bar of your mixed berry white chocolate. That's happiness guaranteed for a whole week! Thank you!”

- Bryony Bayliss, U.K.

“Your Buttery Chocolates are awesome. My son came home with on Military leave with some, he said they stopped in Ireland & he bought some.....Like I said they are out of this world the best tasting chocolate I have ever had.....you all really know how to make awesome candy. Maybe you all could teach the United States how to make awesome candy. You even have Anthony Thomas Candies beat.”

- Debra Holden, U.S.A

Butlers Wall of Happiness

You’ve been trying to go to a happy place all day!

At Butlers, we are trying to bring a little happiness to the world, one chocolate and one coffee at a time. Recently, we asked our customers to share their moments of happiness with us, be it a favourite place, a certain time of day, or even a piece of music that brings a moment of happiness. Some entries even had pictures that included Butlers Chocolates being enjoyed at their happy place!

For me, true happiness is…

B..ound by love,
U..nspoiled by hate,
T..ransferred from above.
L..iving in the present,
E..scaping the past,
R..ejoicing in life,
S..trengthening the downcast.

C..ontent in acceptance,
H..opeful in the hereafter,
O..ptimismic in the uncertainty,
C..hoking with laughter.
O..range and almond,
L..emon sorbet,
A..nd even Milk Chocolate Cream
T..ruffle would make my day!
E..joying a crispy praline and a hazelnut truffle for what seems like infinity,
S..ometimes happiness can be found in simplicity!

3. Our third winning Happiness competition entry came from Nicola Barrett

You're late for work, you missed the bus, rain poured down on you and it feels like the world is against you. But you pop into Butler's in Dundrum where the girl behind the countergreets you with a friendly hello and a smile. She gives you a delicious free chocolate, but the moment of happiness comes when that first taste of the premium coffee hits your lips and you can just relax and enjoy. You know it's all going to be okay - happiness has happened thanks to Butlers!

4. Well done to our fourth Happiness giftcard winner, Sharon Wood

The pleasures of a single life number but a few. A day off, alone, what best to do? A good book, a black coffee, a happy place found. Butler's, a single pleasure, suits me down to the ground.

5. Deirdre O'Hanlon delighted us with her entry to our Happiness competition

Pay cuts and tax hikes my heart is breaking.
My holiday this year will be a staycation.
A Butlers ice-coffee makes my happiness soar,
Puts a smile on my face, I'm happy once more.
But Irish summer sunshine you can never depend.
That's when Butlers hot chocolate and coffee is my friend.
Butlers great value, happiness card and complimentary sweet,
Makes my moment of happiness an affordable treat.
So even when most of my money is spent,
The happiness a Butlers gives is worth every cent.
The Butlers experience means so much to me.
The best things in life are definitely not free.
